email assist - reply to & From email

I have a customer that would like to be able to plug a generic email address into email assist emails so that they can have a reply to go to that generic email rather than the users.
Currently it uses the logged in SFDC user's email address but the reply from their customers is causing some clutter.
Does anyone know of a workaround or a way to accomplish this that is not mentioned in documentation?
